I'd like to know what I should change in the calculateExtendedRoute request to get a route that avoids dirt roads.

It is not possible atm to avoid dirt roads. The "unpaved" attribute that recently was introduced only works for rendering, not for routing.

You can try changing road network parameters as shown in this thread
